WINE MAKING PROCESS
Winifred is produced using a minimalist, non-interventionist approach. Grapes undergo spontaneous fermentation with native yeasts in large, used oak barrels. The wine is aged for about eight months on its lees without batonnage. It is bottled without fining, filtration, or the addition of sulfur, adhering strictly to biodynamic and natural winemaking principles. Hand-harvesting and careful vineyard management are integral to the process, ensuring the wine reflects its unique terroir.
