ABOUT THIS WINE
Wiston Estate Cuvée Brut 2016 is an English sparkling wine from Sussex, produced by Wiston Estate Winery. The estate's vineyard, planted in 2006, benefits from chalky soil similar to that found in Champagne's Côte de Blancs. The Goring family has owned the estate since 1743, with Pip Goring being instrumental in establishing the vineyard. Winemaking is overseen by Dermot Sugrue. The 2016 vintage experienced a challenging start to the growing season, but a favorable late summer and autumn led to grapes with good balance. The wine is distinguished by its extended aging period.

WINE MAKING PROCESS
Wiston Estate Cuvée Brut 2016 is produced using the Méthode Traditionelle. The grapes are fermented separately in aged Burgundy barrels. Following fermentation, the wine rests on lees until spring before blending. It then undergoes a secondary fermentation in the bottle and is aged on cork. The wine was aged on lees for five years before being riddled and disgorged in 2022. The 2016 harvest took place in late October, following a growing season characterized by a cool early summer and a warm, dry late summer and autumn.
