ABOUT THIS WINE
Bürgerspital zum Heiligen Geist is one of Germany’s oldest and most prestigious estates, boasting a 700-year history. Founded in 1316 by the Würzburg patrician Johann von Steren and his wife Mergardis, it still functions under its original philanthropic mission: funding senior care and nursing homes via the profits generated by the winery. It is a proud founding member of the VDP (1955) and is historically credited as the birthplace of the Bocksbeutel—the famous flat-sided, round Franconian bottle in which this wine is presented. The Pfaffenberg ("Mountain of the Priests") vineyard is situated downstream along the Main river, sloping southwest to act as a sun trap.

WINE MAKING PROCESS
Produced from the estate's oldest Silvaner parcel planted in 1971. The grapes are selectively hand-harvested and undergo long skin contact (maischestandzeit) to extract phenolic and herbal complexity. Spontaneous fermentation is carried out using natural yeasts inside traditional large oak casks. The wine is then aged on the fine lees inside large old oak casks (Großes Holzfass) to develop a creamy, structured mid-palate.
