WINE MAKING PROCESS
The Xisto Ilimitado Branco is produced from a blend of Rabigato, Gouveio, Códega, and Viosinho grapes sourced from old vines (30-45 years) at high altitudes (500-600m) in the Douro's Cima Corgo subregion. Vinification involves fermentation using indigenous wild yeasts, with 90% of the must fermented in used French oak barrels and 10% in stainless steel. Following fermentation, the wine is aged for one year on its lees in these same vessels, without battonage. This process aims to highlight the expression of the micaceous schist soils and the unique terroir of the region.
