WINE MAKING PROCESS
The Xisto Ilimitado Tinto is produced using a field blend of traditional Douro grape varieties. Approximately 40% of the grapes are fermented in a stone lagar with whole clusters and foot-treading, followed by an 8-10 day maceration. The remaining 60% are fermented with whole clusters in stainless steel tanks for 20-30 days. Fermentation is carried out using indigenous yeasts. The wine is then aged for 14 months in used French oak barrels. The vineyards are sustainably farmed and are planted on terraces with schist soils.
