ABOUT THIS WINE
Scarborough Wine Co. was founded in 1987 by Ian and Merralea Scarborough in Pokolbin, Hunter Valley. While many Australian producers shifted toward leaner styles, Scarborough famously maintained its commitment to the generous, rich, barrel-fermented style of traditional Hunter Valley Chardonnay. Today, second-generation winemaker Jerome Scarborough and viticulturist Liz Riley continue this heritage, crafting benchmark Australian Chardonnays from terra rossa soils over limestone parentage.

WINE MAKING PROCESS
Fruit is machine-harvested in the cool early morning hours to preserve freshness and acidity. Whole fruit is crushed, pressed, and cold settled in stainless steel before fermentation is initiated. Mid-fermentation, the juice is transferred to French oak barrels to complete fermentation. The wine undergoes 10% to 30% natural malolactic fermentation with monthly lees stirring, followed by 12 months aging in French oak and 12 months resting in bottle.
