WINE MAKING PROCESS
The Keltis Zan 2021 is produced using organic and biodynamic farming practices. The grapes are hand-picked in September. The winemaking process involves a 3-day maceration period with immediately pressed must. Fermentation is spontaneous, utilizing indigenous yeasts without the addition of cultured yeasts. The wine is aged for 6 months in stainless steel tanks. It is bottled unfined and unfiltered, with minimal or no added sulfur dioxide (SO2).
