ABOUT THIS WINE
The Zenato Ripassa Valpolicella Ripasso Superiore is a red wine from the Valpolicella Ripasso DOC appellation in Veneto, Italy. Produced by the family-owned Zenato winery, established in 1960, the wine is crafted using the Ripasso technique. This method involves a second fermentation of the Valpolicella wine over the lees of Amarone, which enhances its color, depth, and complexity. The vineyards are located in the hilly areas of Valpolicella, on soils rich in limy clay and rock fragments. The 2020 vintage is characterized by its intensity and richness.

WINE MAKING PROCESS
The Zenato Ripassa Valpolicella Ripasso Superiore is produced using a distinctive winemaking process. Grapes are harvested manually. Initial fermentation occurs in stainless steel tanks for 10-12 days. The core of the Ripasso method is a second fermentation lasting 7-8 days at temperatures between 25-28°C, where the wine is re-passed over the lees (pomace) of Amarone. Following this, the wine is aged for 18-20 months in French oak tonneaux. A final period of at least 6 months in bottle precedes release.
