WINE MAKING PROCESS
The Zensa Fiano 2020 is produced using grapes from organic vineyards in Salento, Puglia. After hand-harvesting in the early morning, the grapes are de-stemmed and delicately pressed. The must is chilled and settled before fermentation in stainless steel tanks at 18°C with selected yeasts. Following fermentation, the wine rests on its lees for about a week. Orion Wines emphasizes minimal intervention and organic practices throughout the process.
