WINE MAKING PROCESS
The Zensa Primitivo is crafted from 100% Primitivo grapes grown in organic vineyards in Puglia's Salento region. After manual harvesting in late August, the grapes undergo a gentle winemaking process where they are not crushed to preserve skin integrity. Fermentation takes place at 24-25°C for 8-10 days, utilizing remontage and delestage for soft extraction. Malolactic fermentation is induced after racking. A portion of the wine (30%) is aged for eight months in second-passage American and French oak barriques.
