ABOUT THIS WINE
Azienda Agricola Zidarich's 2020 Vitovska is a white wine from the Carso region of Friuli-Venezia Giulia, Italy, made from 100% Vitovska grapes. The wine's identity is deeply tied to the rocky, limestone-rich soils of its origin. Benjamin Zidarich, the winemaker, follows a philosophy of naturalistic and non-interventionist viticulture and winemaking, aiming to produce 'real wines' that express the authentic character of the grapes and territory. The winery's unique architecture, dug into the rock, reflects its connection to the land. This wine is distinguished by its pronounced minerality, a direct consequence of the terroir, and a textural complexity often enhanced by extended skin contact.

WINE MAKING PROCESS
The Zidarich Vitovska undergoes spontaneous fermentation with native yeasts, often preceded by extended skin contact maceration for several weeks. Following fermentation, the wine is aged for two years in large Slavonian oak casks. The winemaking process is characterized by a naturalistic and non-interventionist approach, with a commitment to bottling the wine without clarification or filtration and without the addition of sulfites. These techniques are employed to allow the inherent characteristics of the Vitovska grape and the Carso terroir to be expressed with purity and authenticity.
